The first Seated Tasting with Holloran Wine Pairings took place on May 26, 2018, at the winery, catered by Chef Lauren Carr of Artemis Foods and hosted by Bill and Eve, with help from assistant winemaker Suzy. Set in the newly-appointed kitchen area upstairs at the winery, the northern views of the vineyards were stunning as was the wine and food. The room was full and the conversation lively as each wine was poured to complement each of the small bites prepared by Chef Lauren.
Six wines were featured on this beautiful Saturday afternoon in Dundee. First was the refreshing 2017 Holloran Rose of Pinot Noir, which was paired with a lovely honey lavender-glazed salmon skewer. What a bright way to start the festivities!

Then it was on to four wines from the 2014 vintage. Who knew that this hottest-on-record Willamette Valley summer was going to produce such fabulous grapes? The first of four wines from this vintage was the wonderful 2014 Holloran Chardonnay Le Pavillon, paired with an asparagus and mushroom tart with Boerenkaas cheese. Next up, the elegant 2014 Holloran Pinot Noir Le Pavillon was poured to complement risotto cups with artichoke and Taleggio cheese. After that was the fantastic 2014 Holloran Pinot Noir Meute de Chiens, which was paired with Asian chicken meatballs with a miso mustard sauce. The last of the 2014s on this pleasant spring day was the bold 2014 Holloran Tempranillo La Chenaie paired with polenta boxes with ground lamb, olive tapenade and feta.
The final treat was a delightfully sweet and fruity 2015 Holloran Riesling “Late Harvest” Le Pavillon that was poured with a trio of cheeses (Comte, goat, and brie), rosemary shortbread, and fruit compote.
There was even some time left at the end of the afternoon for Bill to provide an impromptu tour of the barrel room for a couple of lucky guests. This room is where the wine is stored in a climate controlled environment in wooden barrels (and some stainless steel kegs) until it’s aged and ready for bottling.
